Combine vegetables, pancake mix, and 175mL (per serving) water.
Mix well.
Heat 2 Tbsp olive oil in pan.
Spread a thin layer of mixture in the pan, reserving the rest.
Press and cook for 4-6 minutes medium-high heat.
Flip the pancake. Add 1 Tbsp of olive oil on the sides of the pan so the oil flows beneath the pancake.
Cook 4-6 mins while pressing down.
Flip, cook 1-2 mins. Move to a plate. Repeat: Add remainder from the bowl and repeat.
